So I know I've been kinda here-and-there lately, so I thought I'd post my everyday schedule, to let you know what I'm up to.

10:30 A.M. : Wake up, shower and get out the door at EXACTLY 11:07 AM to catch the bus on time. Yes, I've timed it.

12:15 A.M. : Get off the bus, FIVE MILES AWAY, and walk a block and a half to La Folie.

12:20 A.M. - ~10:00 PM : Do all kinds of stuff. I usually start by putting the day's order away. (produce first, then our meat comes, then our seafood. Every now and again we get dry goods, but we stock up pretty well, so it's not more than once a week.) After that I help out the other cooks with their Mise en Place, making Tatins, rolling canneloni, wrapping veal loins in caul fat - all kinds of stuff. Generally after the crab and lobster is cooked off, I'm the one tasked to "break it down", meaning remove all the meat from the shells, in predetermined ways, so that they can use it during service. I also do a lot of other fabrication stuff, but it varies from day to day - shellfish is pretty much an every day thing. I guess the others don't really like doing it. :) Around 5:30, about half the time I'm put in the back room by the dish pit, making the amuse bouche. It's generally just something as simple as spooning some dressing onto a plate in a little "swoosh" and then putting some tasty stuff on it, but it changes pretty much every day. The other half of the time, I do additional prep work in the OTHER back room (my favorite, 'cause it's away from the kitchen and all nice and quiet) and then clean the walk-in.

 10:00 P.M. - 11:00 P.M. : Cleanup time. I generally ice down the 10 or so sauces we use before putting them back in the walk-in, tidy up my station, and help sweep and whatnot. When it's all done - we go home. Sometimes it's as early as 10:15. Sometimes it's at late as 12:30. Thankfully this is our slow season, so we only have between 30-50 covers most weeknights, 70 or 80 on Saturday. As we leave, I call Liz to come pick me up, so I don't have to spend an hour on the bus going home.

~12:00 A.M. : Have DINNER.

12:30 A.M. - 5:00 A.M. : Play World of Warcraft. :) Oh, and do a comic.

5:00 A.M. : Sleep, and get ready to do it all again tomorrow.

Oh, and on a completely unrelated note - whoever has the character name of "Maelyn" on Elune - die a slow death. That's MINE. MINE I tell ya. Now my Blood Elf's gotta go through her life as a bastardization of my go-to female character's name. *growl*
